Strawberry & Argula salad with a tangy poppy seed dressing

Say hello to your new favorite summer salad! It’s extremely light, very refreshing, healthy and absolutely delicious. Strawberry is mixed in with Argula, Spinach, Walnuts, Almonds, Blue berries and Feta cheese. My mouth is already watering… so delicious! I pair it with an easy Poppy seed dressing that will leave your tastebuds screaming yum at each bite! So without further delay, let’s get to the recipe!

Strawberry & Argula salad with Poppy seed dressing

Serves: 4

Ingredients:

Salad:

  • Fresh Argula
  • Fresh Spinach
  • 1/2 lb Strawberries
  • 1/4 cup Blueberries
  • 1/4 cup sliced, toasted almonds
  • 2 tbsp chopped walnuts
  • 1/4 cup Feta cheese

Dressing:

  • Avocado oil 2tbsp
  • Olive oil 1/3 cup
  • Quarter piece of an onion
  • Honey 2 tbsp
  • Apple cider vinegar 3 tbsp
  • Garlic powder 1/4 tsp
  • Ground mustard 1/4 tsp
  • Dijon mustard 1/4 tsp
  • Lemon juice 1 tbsp
  • Black pepper a pinch
  • Salt 1/4 tsp
    Roasted Poppy seeds 1 tbsp
    Mayonnaise 1 tbsp
    Greek yoghurt 1 tbsp (optional)

Method:

In a blender, add all the ingredients of the dressing except for the Poppy seeds and blend for 2-3 minutes. The dressing will become white and thick. Add the Poppy seeds but don’t blend anymore. Simply stir them with a spoon. Add dressing in a jar with a lid. Refrigerate until ready to eat.

Toss all the ingredients for the salad in a big salad bowl. Drizzle the poppy seed dressing and serve immediately.

This dressing is lower in calories than store bought stuff and is spoon-lickably good!
